Plant Based Momma: Southern Food & Eat Good!

People feel because you eat plant based or vegan “your new lifestyle” doesn’t include good, delicious southern foods. But that’s true at all! You can still eat the foods you love just replace ingredients that do not include any animal products. Trust me, there are tasty replacements out there. Research! Google and Pinterest will be your best friend.

Being from the south (Tennessee) soul food is one of my favorite foods.

I will say that my weakness and love are greens from mustard, turnip to collards.

I am not going to lie; the best flavoring was the fat back or ham hock. Omg… it made the greens taste so freaking amazing.

BUT I found a new way to enjoy greens without any animal products.

 

Vegan Turnip and Mustards Green

Vegetable Broth

Half of a Onion

1 Red, 1 Yellow, 1 Orange Bell Pepper

Spices: Garlic Powder, Onion Powder, Smoked Paprika, Tumeric, Sea Salt and Pepper

 

Pick your greens and wash them several times, until your water is clear or very light green color.

Cut up your onion and peppers.

Turn stove on and pour in the whole container of vegetable broth and let it simmer. Add a cup or two of water. Season your broth with all the spices above, but not over season! Include the onion and peppers. Let boil for 15 minutes.

Now, it’s time to put in the greens!

For those who will say, but there is not fat back or ham hock, it’s not going to taste good! LIESSSSSS!

That smoked paprika is bomb! Trust me, you will love how these greens will taste! And it’s a healthy choice for you.

My son is the pickest little creature alive but he tears these greens up!

Once your greens cook down, add more seasoning to your liking. I hope you enjoy this dish.
